Fall Friday Recipe: Stuffed Pepper Soup - Under $12!


HAPPY FRIDAY, Y'ALL! I am excited to bring you another crock-pot recipe today! If you missed last week's recipe, it was Slow Cooker Chili With Beans. This week it's a Slow Cooker Stuffed Pepper Soup! Are any of y'all lovers of stuffed peppers?! I do like them and they are so easy to make, but I have to say I prefer the soup over that for sure because this recipe was so yummy!



Ingredients:
- 1 lb. lean ground beef or ground turkey
- 1 medium sized yellow onion, chopped
- 2 tsp minced garlic 
- 3 cups beef broth
- 2 (10 oz) cans of diced tomatoes with green chilies
- 1 (15 oz) can of tomato sauce
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 jalapeno peppers, chopped (optional, but it didn't have much of a kick, I would personally add more next time)
- 3 cups of brown or white rice, cooked
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and pepper to taste


Directions:
1. Line slow cooker with crock-pot liner for easy clean up.
2. Heat skillet to medium-high heat and saute your onions in 1 tbsp of olive oil until translucent, then place in the slow cooker.
3. Brown the beef over medium-high heat, season with any preferred seasonings, drain, then place in the slow cooker.
4. Add in garlic, beef broth, diced tomatoes, tomato sauce, bell peppers, jalapenos, oregano, and basil. Let cook on low for 6-8 hours or on high for 3-4 hours, adding in the cooked rice half an hour before serving.
5. Add any preferred toppings (I used fresh basil and shredded cheese) & ENJOY!
