Meal Prep Sunday: Seafood Edition

Good Afternoon! I hope everyone had a great weekend! I spent Saturday at Volente Beach for my dad's company party, so stay tuned - I'll be sharing about that on the blog Wednesday!

I enjoyed writing last week's post about getting back on track with Sunday Meal Preps so much, that I decided I might do this fairly often as it may potentially help someone else, and just hold me accountable. I probably won't post every single meal prep as some of them will probably be repeated & get pretty basic but I'll definitely start sharing my favorites! This week I made parmesan crusted tilapia & shrimp over a bed of cilantro-lime rice, with a broccoli, cauliflower, & carrot medley. Yum, yum, & yum.

 Above are the main ingredients used for my lunches this week. Not only can I make this in under half an hour, but it also costs less than $20! Some days I'll get fresh veggies, but let me tell you, all of these frozen items make meal prepping sooooo dang easy that there is no room for excuses. 
Tilapia: Easy instructions on back - 20 minutes in the oven at 425 degrees.
Shrimp: You thaw them out under cold water (takes less than three minutes), and then I just heat them up on the stove with some butter and a few staple seasonings.
Rice & Vegetable Medley: Both can made in the microwave (each take 5 minutes) and again, I'll just add my butter and staple seasonings to the veggies and I'll add lime juice and some cilantro to the rice.
Easy peasy lemon squeezy.
There are two pieces of tilapia in the package, but I'll cut them in half to have four servings as I'm adding shrimp on top anyway. I'm always left with some rice and shrimp remaining, so I can easily throw that into a lettuce wrap or salad one day to make five full meals.

I also did a scrambled breakfast of eggs, ground turkey, spinach, and tomatoes. I can eat this by itself or throw it in a tortilla.
